Fudgesicles! updated 6-13-2017

Today is the first day that I have made fudgesicles since last summer.. maybe longer :( I struggle looking through all of my old posts looking for the recipe I thought would be hidden in there. (That was June 7th).

By June 9th all the popsicles were gone! But I did only make 24 popsicles and there were 4 kids to eat them in 48 hours... okay maybe we should limit their popsicles intake a bit. I cannot believe that I never posted any of the chocolate frozen goodies I have made! I also cannot believe I didn't take a single picture the process or the product! Well today I must try to do that and the ones I made are gone... down to the tummies of some very happy little girls :) But it is Saturday and we have a birthday party to go to so it might not be today.

It should be today because it is only 7 am now and I have been awake for nearly two hours... but that was not really by choice. So first we are having "Easy French Toast Sticks". This is a good way to use up bread that is about to stale or outdated and slightly dry works best anyway.

Slice each piece of bread into three "sticks", allow to dry for a bit at room temp. Mix up your favorite French toast recipe.  Ours is 2 eggs well beaten. stir in a tablespoon of milk and a generous sprinkle of cinnamon sugar!  Dip each dried stick into this mixture and fry in a bit of your favorite oil. Drain on a paper towel covered plate and sprinkle with more cinnamon sugar. Serve up a fun French toast breakfast! By the way the ones you get for a buck are about one slice of bread. Would you pay a buck for a slice of bread on a regular basis?

I did do step by step for the fudgesicles. Here is the recipe that I modified from BeeMaid.com. They also have a really cute children's activity book there on the site for a free download. 

Fudgesicles 
2 Cups milk (I use 1 cup heavy cream and 1cup milk normally)
1/3 cup honey
3T cocoa powder
2T corn starch
pinch of salt
1T vanilla
1T butter
 Today I used the 2 cups of milk instead of my usual and it turned out great! First place milk and honey in a heavy bottomed sauce pan over medium heat stirring to blend, add cocoa and cornstarch and salt. Continue to stir to break up lumps and blend well and stir until mixture starts to thicken. Remove from heat add vanilla and butter. Stir until butter melts and is well blended. Pour into popsicle molds and freeze until solid.  Enjoy!

The kids are worn out from the party and I have to be at work at 2 am so I will catch up another time and show pictures of the diapers for the new baby and the gift wrapping for the party!
